Strictly speaking, there is neither allergy nor intolerance. The allergy is immediate, we are in contact with the allergen and develop symptoms immediately. In fact, celiac disease is an autoimmune disease (generating an immune response against the body itself) in which the main exogenous factor is known, which is gluten. It produces antibodies directed against the intestine, which will induce after a number of years or months, a destruction of the intestinal villi and symptoms.

On the other hand, an allergy is an immunological reaction that can be mediated by different IgE or cell-mediated immunoglobulin or other immunological mechanisms.

Intolerance, however, is a clinical concept that is not related to immunological mechanisms. It may be due to enzyme defects, pharmacological effects or undetermined mechanisms.
